Chocolate + Coffee + Chops

Raise your hand if you ever eat chocolate for dinner … ( meee ! ) Raise your hand if you ever eat chocolate and sometimes coffee for dinner … ( meee ! ) For those of you who are gasping right now can just relax because I came up with a way that makes it all okay. As for the rest of us who have no shame in a little dessert for dinner every now and then here’s something we can enjoy that our moms will approve of :

Chocolate & Coffe Pork Chops w/ Garlic Spinach

First things first — the coffee. The flavor is prominent in this recipe so you gotta use the best !

There’s this sweet little coffee shop just up the block from my apartment, Oddly Correct. I’ve only been in a handful of times, but enough to know their beans are divine. So, since I’m already on a roll of treating my self with chocolate for dinner and all, I kept the trend going and bought a pound of their coffee just for the occasion ;)

Next is the cocoa powder, also very important ! Brown sugar, cumin, chili powder, cayenne and onion powder

 

 

Chocolate + Coffee + Chops

ingredients :

– 2 pork chops

– 1 T brown sugar

– 1 T unsweetened cocoa powder

– 2 t coffee grounds

– 1/4 t chili powder

– 1/4 t onion powder

– 1/4 t cumin

– 1/4 t cayenne

– a pinch of salt

garnish with fresh thyme

how to :

– in a small bowl mix together the sugar, cocoa, coffee, chili powder, onion powder, cumin, cayenne and salt

– rub the mixture on both sides of the pork chops until they are well covered

– place the chops in the fridge for about an hour ( or cook immediately )

– you can grill, pan fry or oven bake these pork chops. I used a stovetop griddle

– over medium heat cook on each side for about 4 minutes or until cooked thoroughly

Serve over a bed of garlic spinach (recipe below) & enjoy !

Garlic Spinach

ingredients :

– 4 handfuls of fresh spinach

– 1 T olive oil

– 1 clove of garlic

– 1/2 t crushed red pepper flakes

salt to taste

how to :

– in a pan over medium heat the olive oil garlic and red pepper

– once the garlic starts to turn light golden throw in the spinach

– it will only take a few second for the spinach to wilt and turn bright green

– remove for the heat and salt to taste
