I’m bustin’ out another family recipe this week. This one is inspired by the call of cold winter evenings and cozy meals from home. My mom made this soup a lot growing up — quick, easy, and oh so comforting. I’ve never made it myself until now. When I asked my mom if she would let me in on her recipe I discovered it’s actually my grandma’s recipe (!!) For me, that makes it even more special. I think that’s what I enjoy so much about food. Besides the fact that I just really like to eat, I enjoy that it’s all been pasted down. All of our recipes and ideas about food came from someone before us — it’s like history. And most of what we learn about food comes from those that feed us — it’s like love. Food is love, ya know. ☮ ✌
Any who, here’s the recipe. It fills my heart with warm fuzzies as well as my belly. ~~ pass it on ~~
Lentil Soup
Ingredients :
– 1 T butter
– 2 T olive oil
– 1/2 C chopped onion
– 1/3 C chopped celery
– 1/3 C chopped carrot
– 1 minced clove of garlic
– 3/4 C cubed ham
– 1 can diced tomatoes
– 1 t oregano ( fresh or dried )
– 4 C beef broth
– 2 C water
– 1 C lentils ( any kind will do — I used brown lentils )
salt and pepper to taste
How to :
– over medium heat warm the butter and oil
– Sauté the onion, celery, garlic, carrot and ham for about 5 minutes
– add the canned tomato and oregano. as you add the tomato pour it over your hand and crush any big chunks before they make it into the pot.
– let it simmer for 5 minutes
– add the broth, water and lentils
– cover the pot and cook for about an hour until the lentils are soft
salt and pepper to taste
