Gourmet Glamping

Hints of spring are in the air, people (!!) and I already feel like busting out my crop tops and Birkenstocks! Okay, maybe it’s still a little too early though. I’m a total shivering wimp if it’s anything less than 70° and sunny outside. But anywayyyy, you know what it’s definitely NOT too early for?! Planning your spring glamping menu. Yup! And that’s exactly what my good friend Lauren and I have been working on. We recently brushed off the winter leaves from her sweet little vintage glamper and started brainstorming… with wine of course. Camping with friends doesn’t have to mean eating foil pack hamburger and Fritos over a fire. Although there’s definitely nothing wrong with throwback girl scout campfire food just for the record! But why not elevate the experience a bit, something delicious but still simple. We are starting to get used to this whole adulting thing after all.

Just like cooking at home, planning a glamping menu doesn’t have to be difficult. It just takes a little thinking ahead and planning. So pop open a bottle of something for yourself and make a grocery list a head of time. Lauren and I can up with a wonderful and healthy Coconut Oil & Thyme Salmon and the cutest little Asparagus Tartlet.

Here’s our shopping list:

– salmon filets, one per glampee

– coconut oil

– fresh thyme

– salt & pepper

– one bundle of asparagus

– butter

– red wine vinegar

– honey

– a package of puff pastry, arguable the most amazing thing one can purchase at the grocery store in a package. For real tho!

We also made a list of utensil we would need to cook with during our glamping trip. Packing and I don’t usually get along and I almost always manage to forget something. Lists have become my best friend. And that’s your adulting tip of the day.  Okay, here’s the list… ;)

– cast iron skillet

– cutting board

– knife

– measuring cups and spoons

– things to eat on

– things to eat with

– drinking glasses

– BOTTLE OPENER

– dish soap

– dish towel
